Over the years I have undoubtedly spent a small fortune on various kinds of candied nuts. They are delicious coarsely chopped in salads, but equally as delightful by themselves. They are an easy, not-so-healthy on the go snack & they are completely addictive. Should I have known you can make your own (slightly more healthy) version at home I would have stopped spending $6 for a not so large bag at Trader Joe's a long time ago. Here is where I get to play the poor college student card and make my own. & how could I not jump at the chance, since they are easier than a young Pamela Anderson?
Recipe:
1.5 C Raw Almonds
.5 C White Sugar
.75 Tbl Cinnamon
.5 C Water
Pinch of Salt
Directions:
Combine water, sugar, and cinnamon in a sauce pan over medium high heat. Bring to a boil, and add your almonds. Reduce your heat. Let the mixture stay over heat until the liquid around the almonds is a thick syrup texture. Make sure you stir it regularly, but leave the almonds in a single layer so they get candied evenly. Once the syrup is thick enough put the almonds on a wax paper covered cookie sheet. Separate all the almonds and let them cool for at least 15 minutes. These almonds are even better the next day.
